Confit Pork Belly, black pudding and chive mash, braised red cabbage with apple, red wine jus and crispy crackling

Pan fried salmon on a bed of mashed potato with peas and chorizo

Gin cured salmon with cucumber and wasabi emulsion

8 hour Slow cooked shin of beef in a red wine and port sauce served with parsnip and carrot crush seasonal veg and goose fat roast potatoes
